Girl Scouts use local produce in food project

BINGHAM — Backyard Farms in Madison recently donated a box of its Backyard Beauties to the local Senior and Ambassador Scout Troop in Bingham/Moscow. The girls were perfecting their raw blender salsa recipe and learning about the salsa's food footprint.

Getting ready to make salsa are Girl Scouts Maria Leathers, Hali McQuilkin-Crossman, and Kayla Routhier.

The interest project they are working on this year is about the food network.  Consideration is given as to how far food needs to travel before it gets to a family’s table, as well as the environmental and energy costs associated with that trip. The scouts chose to work with a locally grown main ingredient in their salsa to lessen their food footprint.


At another meeting, the girls tried many different smooth recipes. Each recipe included frozen Maine blueberries.
